Instructions
Boil the potatoes, Peel and mash with potato masher.
In polenta pot pour the butter and when melted, stirring so that they do not do lumps, then finely chopped onion; do you cook the whole thing, and then you add a little water and milk and potatoes.
At this point add some salt and stir continuously for about 20 – 30 minutes.
The polenta is ready when the crust that forms on the pot split is scorched.

- 2000 g of val di gresta potatoes
- 100 g of butter
- 100 g of white flour (or cornmeal)
- 1 onion
- Water
- Milk
- Salt
