Tarragon chicken (2)
Instructions
Clean and flaming chicken, wash it, dry it and rub it inside and out with lemon.
Dissolve half lard over low heat and add the tarragon finely crushed, put inside the chicken and sew.
Salt and pepper the outside and place in an ovenproof dish with tassels of lard, sprinkle with oil and bake in the oven.
Serve with a tarragon sauce.

- 1 chicken
- 1 sprig of tarragon
- Sage
- 1/2 lemon
- 2 nuts of lard
- Olive oil extra virgin
- Salt
- White pepper
