Instructions
Boil and squeeze spinach, chop.
In a saucepan, Brown the onion in oil and butter, add the spinach and season with salt and pepper, stir well and allow to dry the water that still contain.
Remove from heat and just are lukewarm, form a ball with spinach, or rather a big salami, place it in a tea towel and let it cook for 20 minutes in a Bain-Marie.
Remove and let rest a minute, cut into slices and serve dishes with plenty of grated cheese and melted butter.
