Put Lavender in a bottle and pour the vinegar, previously brought to the boil.
Seal the bottle and let it soak in a dark and cool for at least 2 weeks.
Before using the vinegar, remove withered and faded lavender and filter the liquid into a new bottle.
This vinegar is excellent with the salad.
