Good champagne vinegar
Instructions
Chop the truffle and put it in Champagne for one night, making sure to seal the bottle.
To reduce by half the vinegar with all the spices.
Stir in the Champagne, bring to a boil and remove from heat.
Let stand for 3 days then pass it all through a sieve.
Bottle and fill up with a Cap.
Ingredients and dosing for 4 persons
- 100 cl of champagne wine
- 100 cl of white wine vinegar
- 40 g of truffles
- 5 g of thyme
- 3 g of sesame
- 5 g of tarragon
- 5 g of ginger
- 5 grains of green pepper crushed
