Mild vinegar sugar
Instructions
Bring to a boil the white wine; combine the sugar and simmer for another 5 minutes, then add a little at a time, the vinegar and simmer for another five minutes.
When the mixture is cool, filter it and add the juniper berries and black peppercorns.
Keep the vinegar in a dry place waiting at least 1 month before using it.
This vinegar is particularly suitable as a supplement of flavors with flavoured cheese with boiled or grilled meat, with the scallops with peppers and grilled aubergines.
The result can be curious and surprisingly pleasant.

- 25 cl of white wine
- 50 cl of white wine vinegar
- 100 g of sugar
- 15 berries of juniper
- 5 grains black pepper
