00314 ANCHOVIES on BREAD CRUMBS INGREDIENTS for 4 PERSONS 24 fresh anchovies, a spoonful of capers under salt, 2 cloves of garlic, a bunch of parsley, 4 tablespoons of olive oil, 2 tablespoons of breadcrumbs, 70 g grated Grana Padano cheese, salt, pepper.
First clean the anchovies, depriving them of the head, and then open them in half and remove the Central bone.
Wash well under running water and put them to drain.
Wash the capers and pat dry.
Then mince them finely together with the parsley and garlic.
Pour the mixture into a bowl and add the oil, breadcrumbs and Grana Padano.
Add salt and flavored with a generous ground pepper and mix well.
Lay the anchovies and the inner surface is distributed the mixture of breadcrumbs.
Roll them up starting on the side of the head so that the queues remain high.
Oil a baking dish and sprinkle the anchovies and pressandole lightly to keep it open during cooking.
Place in the oven already warm (180°) and cook for about 15 minutes.
