Salmon and avocado rolls

00157 SALMON and AVOCADO ROLLS INGREDIENTS for 4 PERSONS 8 slices of smoked salmon, a big and ripe avocado, 4 tablespoons of mayonnaise, an egg, a tablespoon of mustard beans, lettuce, 5 tablespoons of olive oil, 2 tablespoons of vinegar and salt.
Prepare a vinaigrette with olive oil, vinegar, mustard and a pinch of salt.
Peel the avocado, remove the bone and knead the meat with a wooden spoon.
Add the mayonnaise and 2 tablespoons of the vinaigrette, stir well and incorporate the egg whites mounted to snow.
Divide this mixture onto the salmon slices then roll them up.
Serve the rolls over to lettuce sliced and sprinkled with the remaining vinaigrette.
