Salmon rolls with green apples

00560 SALMON ROLLS with GREEN APPLES INGREDIENTS for 4 PEOPLE 300 g salmon 200 g apples granny smith, 200 g of ripe avocado, 3 lemons, 2 eggs, 2 dl of olive oil, a dl cream, 4 sprigs of dill, 10 g dried berries.
Thaw the salmon, cut into thin slices, salt and pepatelo; sprinkling it with olive oil and put it in the refrigerator.
Prepare a mayonnaise with eggs, lemon juice and olive oil.
Cut apples and avocados into small pieces and mix them with lemon juice.
Cover the slices of salmon with preparation obtained and put them in plastic wrap.
Beat the cream, add the lemon juice, salt and pepper.
Garnish the plates from aperitif with thin lines of mayonnaise and serve in rolls, garnished with a little cream and a sprig of dill.
