Tomato aspic
Instructions
INGREDIENTS for 4 PEOPLE 1 kg of ripe tomatoes, 4 slices of bread, 1 clove of garlic, 1 onion, the juice of 1/2 Orange, 1 teaspoon powdered thyme, 3 sheets of isinglass, chili powder, olive oil, vinegar, salt and freshly ground pepper.
Wash the tomatoes, heat in boiling water for 1 minute, drain them and let them cool.
Peel them, cut them in half and remove the seeds.
Remove the crust from the bread slices, place them in a bowl, cover with 4 tablespoons of vinegar and a few tablespoons of water.
Let buildup for a few minutes.
Put in the mixer the tomatoes and bread into pieces, add the oil, garlic and onion cut both.
Blend the ingredients until a smooth cream.
Add salt and pepper.
Season the past with powdered thyme and a pinch of pepper, or more to your taste.
Put soaked in cold water fish glue, as they will be softened, drain, squeeze it and dissolve it at moderate fire in a nonstick saucepan with 3 tablespoons orange juice.
