Salmon mousse (mousse al salmone)

00480 SALMON MOUSSE INGREDIENTS for 4 PERSONS 250 g of defrosted cod and boiled, 200 g of smoked salmon, 1 and 1/2 dl of milk, 15 g of butter, 20 g white flour, chopped parsley, chives, pepper, lemon juice and Peel, nutmeg and salt.
Prepare a white sauce in a saucepan in cold milk, flour, a pinch of salt, pepper, nutmeg and a knob of butter.
Bring to the boil on fire sweet stirring constantly until the sauce is thickened.
Blank and add a teaspoon of chopped parsley and two strands of shredded chives, cover and let cool.
Mix the cod skinned with salmon, Peel and the lemon juice and add to sauce; mix well and let cool in the refrigerator.
Serve the mousse fresh (not directly from the refrigerator, but after holding a little at room temperature) along with thin slices of bread.
