Salmon and spinach rolls in rice paper

00719 SALMON and spinach ROLLS IN RICE PAPER INGREDIENTS for 4 PEOPLE 4 tablespoons mustard, 2 tablespoons olive oil, 2 tablespoons wine vinegar, 2 tablespoons chopped chives, 8 large leaves of spinach, 8 sheets of rice paper, 8 thin slices smoked salmon, salt and pepper.
In a bowl mix the mustard with olive oil, vinegar, chives, salt and pepper.
Wash spinach and then boil in salted water for about 10 seconds.
Let cool, then icing stendendole on a plastic cutting board.
Wipes the rice paper sheets.
Lie on either a leaf of spinach, a slice of smoked salmon and spalmateli with mustard sauce.
Roll up the rice paper and served the rolls without waiting.
