Feta cheese with vegetables in lemon shells

00288 FETA with LEMON SHELLS VEGETABLES INGREDIENTS for 4 PEOPLE 2 big thick skinned lemons, 4 tablespoons of plain yogurt, a tablespoon of olive oil, 100 g cubed feta cheese, 200 g of diced cucumber, a small yellow pepper, diced, 3 spring onions into rings.
Cut the lemons in half lengthwise with a knife tip to gently svuotateli without breaking the skin.
Removed from the pulp any hangnails, filaments and seeds and coarsely cut over a bowl to collect the juice.
Yogurt emulsified with olive oil, lemon juice, dill, salt and pepper.
Pour a little vinaigrette in lemon shells.
Place in a salad bowl the lemon pulp, feta, cucumber cubes, cubes of pepper, the onion and stir.
Spread the mixture in lemon shells and press it down slightly.
Let stand an hour in the refrigerator.
When serving, nappate with the rest of the vinaigrette and serve.
