01249 YELLOW GREEN ROLL INGREDIENTS 1 1/4 PEOPLE 2 kg spinach, 2 eggs, 300 g flour, 50 g butter, 100 g Grana Padano cheese 1 kg of potatoes, salt and nutmeg.

PROCEDURE boil the potatoes in salted water with the Peel.

Clean and Wash spinach thoroughly and boil them with the only water left them.

Drain well, chop and sauté them in a pan with a knob of butter.

Out of the fire incorporated an egg, three tablespoons of Parmesan cheese and a pinch of nutmeg.

Peel the potatoes and put them in the ricer directly on the work surface.

Incorporated the other egg, salt and lots of flour how much they will need to have a compact dough.

Place the dough on to a cloth and with a rolling pin roll out in a layer of approximately 2 centimeters.

Spread the spinach filling over the dough and roll it up carefully with the cloth.

Let it cook in boiling salted water for about 20 minutes.

Allow to drain well, remove the towel and allow to cool.

Cut into slices about an inch thick and place them in a buttered baking dish.

Sprinkle with melted butter and grated Grana Padano cheese.

Put in the oven already warm (220°) allow to grill for 10 minutes.
