Mess of pasta and eggplant

01037 PASTA and eggplant PIE INGREDIENTS for 6 PEOPLE 1/2 kg of pens; 2 kg of tomatoes; oil; Basil; Salt; 1 Fior di latte; 1 or 1/2 Eggplant; 3 tablespoons grated Parmesan cheese.
Make a sauce with the tomatoes peeled and cut into pieces, olive oil and a pinch of salt.
Cut the aubergines into slices, FRY in plenty of oil.
place in a baking dish greased with oil and powdered breadcrumbs: layers of pasta, Fior di latte, eggplant, tomato sauce, basil, and a handful of grated Parmesan.
Bake in preheated oven for 10-15 minutes and serve.
