Provola and sparkling wine Risotto
Instructions
Cut into small pieces of cheese.
Put half the butter in a pot, rice and a glass of sparkling wine, Cook for 5 minutes, add the hot broth, a little at a time, gradually being absorbed.
At about half-cooked put the remaining champagne and cream, stir.
When the rice is cooked add the provolone, butter.
Serve with grated cheese.

- 300 g fresh provola
- 2 glasses of dry sparkling wine
- 1 l of broth
- 250 g cream

- grated cheese
