Ravioli with radicchio

2_03271 RAVIOLI RADICCHIO INGREDIENTS for 4 PEOPLE 400 g ravioli stuffed with ricotta and spinach, 1/2 onion, a tuft of Red radicchio, 100 g of salted ricotta, nutmeg powder, olive oil, basil, salt and pepper.
Wash and peel the leaves of the radicchio.
Cut them into strips.
Chop the onion finely and fry it gently in the oil.
When will ben Golden, add the radicchio and let it dry for a few minutes.
Bring to boiling and remove from heat before you add salt and pepper.
Then carefully stir with a wooden spoon.
Cook the ravioli in salted water, drain and toss them in the pan with radicchio; Add stirring slowly the grated cheese and nutmeg.
Let rest a few minutes.
Serve with a generous grated ricotta salata.
