Instructions

2_03299 NOODLES with SALMON and SPINACH INGREDIENTS for 4 PEOPLE 350 g tagliatelle all'uovo, 2 salmon fillets (300 g each), 100 ml of white wine, onion, pepper and beans, 200 g of spinach, 30 g of pine nuts, 50 g Parmesan clean and Wash spinach well, removing the stem.

Place in a blender with pine nuts and grated cheese and whisk until the sauce, season with a little pepper.

Remove any bones from the salmon fillets and cut them into cubes.

Peel the onion and chop finely.

Place in a saucepan with a few grains of pepper, the onion and the salmon cubes, salt and cover with water.

Bring to a boil and cook for a few minutes.

Remove from heat and let cool to room temperature.

Once it has cooled, remove the salmon and 100 ml of filtered broth.

Cook the noodles in salted water and drain.

Put them in a salad bowl, combine the broth and spinach sauce, mix and lay over the cubes of salmon.

Served warm or cold.
