Shrimp soup (vellutata di gamberi)

04910 SHRIMP CREAM INGREDIENTS for 4 people: 800 g of shrimps; an onion; 100 g of tomato sauce; a glass of dry white wine; a clove; a leaf of Laurel; a pinch of thyme; half sachet of Saffron; a spoonful of potato starch; 40 g butter; half a glass of cream; an egg yolk; salt, pepper.
In a saucepan, boil over low heat for about 20 minutes a liter of water and the amount of white wine, onion, cloves, bay leaf, salt and pepper.
Wash the prawns and immerse them in an aromatic broth in boiling.
After five minutes you pour everything into a colander holding the broth aside.
Shelled shrimps, and less a score that will decorate, puree through a sieve, or beat them with the cooked onion.
In a Pan fry the tomato pulp with 20 g of butter, then add the shrimp's past with their broth, saffron and starch loose a little cold water and a pinch of thyme.
A small flame, Cook stirring for 5 minutes.
The amount of cream so obtained should be enough for 4 people.
Otherwise add some hot water.
Meanwhile, in a bowl, mix the remaining butter with the egg yolk and cream, pour over the hot cream, stir and serve each dish by adding shrimp kept aside.
