Artichoke soup with shrimps
Instructions
ARTICHOKE VELOUTE 04915 with PRAWNS INGREDIENTS for 4 PEOPLE 1/2 kg of artichokes cleaned, unshelled shrimp 12, 200 ml milk, 6 egg yolks, 2 tablespoons of cognac, olive oil, salt and pepper cut the artichokes, sliced very fine.
Heat a little oil in a frying pan and cook the artichokes until golden brown.
In another Pan fry in oil the shrimp, pour the cognac and fiammeggiate.
Strain the cooking sauce and keep it.
Beat the egg yolks with the electric mixer, place them in a saucepan and cook in a Bain-Marie until they increase in volume.
Add the milk and beat with the whisk until mixture is puffy and fluffy.
Remove from heat, season with salt and pepper, add the filtered cooking sauce, artichokes and shrimp pieces.
Stir well and serve the hot soup.
