Prepare a batter mixing two tablespoons of white flour with 2 tbsp milk, season with salt, add the egg yolk and albumen mounted to snow.

Discover one by one the flowers of zucca deprived of pistil and stem, washed and dried, fry them in a large pan with hot oil. When they are golden, drain them and let them dry on a paper towel type. Serve hot, scattering them well with salt.
