05223 RATATOUILLE of VEGETABLES INGREDIENTS for 4 PEOPLE 3 eggplants; 3 Zucchini; 2 onions; 2 medium peppers; 1 clove of garlic; 200 ml.
tomato sauce; oregano, basil, parsley; oil and salt.
Cut into squares and place them aubergines in salted water for about an hour to remove the acid.
After drain and keep aside.
Diced chopped zucchini, onions very fine slices and sliced peppers and then put everything in a little pot bases with aubergine, two tablespoons of olive oil and tomato sauce, add the peeled garlic.
