Washed, cooked and well drained spinach, strong strizzateli with your hands.

Mince and place them in a saucepan on low heat turning inaderente often.

Removed from heat, mix them with the Parmesan, beaten eggs, nutmeg, sultanas previously soaked in warm water and add salt.

Make round patties and put them in the breadcrumbs.
