06889 BEEF STEW with CHESTNUTS INGREDIENTS for 4 PEOPLE 1 kg of beef chunks, 1/2 kg of chestnuts, 100 g of lean Bacon, 100 g of smoked ham, 1 large onion, 2 cloves, 200 ml of red wine, 1 nut meat broth, 1 orange zest, oregano, thyme, salt, pepper, flour, oil.
With a sharp knife cut the Peel chestnuts; boil for a few minutes to soften the skin that covers, peel them and cook in salted water until almost tender; keep them aside.
Peel the onion, cut finely and FRY fresh focus, in a bit of oil to make it transparent.
Add the pancetta and prosciutto, cut into thin strips, a little oregano and thyme, orange peel, cloves and cook for a few minutes.

Add the chestnuts and cook for 30 minutes, soft focus.
Before serving, add salt.
