Croquettes padane
Instructions
INGREDIENTS for 4 PEOPLE 300 g of minced veal meat, 200 g of stale bread, 80 g of mortadella, 1 glass of milk, 1 egg, 1 egg yolk, 5 slices of bread, 80 g of grated Parmesan cheese, 1 tablespoon of chopped parsley, nutmeg, pepper, salt.
Pass the bread through a sieve or cheese grater with a very coarse grained.
Soften stale bread in milk; Add salt and pepper, sprinkle lightly with nutmeg, then mix with a fork so as to obtain a homogeneous compound.
In a bowl mix the meat, mortadella, finely chopped parsley and add the softened bread, grated Parmesan cheese, freshly beaten eggs and knead thoroughly.
Add salt.
Divide the dough into Walnut-sized balls and put them in the bread crumbs, press down carefully and cook in hot oil, possibly in a deep Fryer.
Retire and let them drain on paper towels.
