06979 FILET TARTARE INGREDIENTS for 4 PEOPLE 500 g Beef Fillet, 2 lemons, 2 egg yolks, 3 tablespoons capers, 6 teaspoons of olive oil, a leek, a sprig of parsley, salt, pepper, salad to garnish.
Clean the fillet from the fat and skin.
Pass the meat mincer or finely tritatelo the knife on a cutting board.
Season the meat with oil, salt, lemon juice and a good handful of pepper.
Wash the lettuce and arrange in indivbiduali dishes.
Using your hands, knead the flesh, giving it the shape of a hamburger; then put them at the center of every single dish.
Rinse the capers under running water, cut the leek into rings or coarsely tritatelo: place these ingredients above all tartare.
Garnish with lemon slices and serve immediately before the lemon? bake? the meat.
