Roast pork with lentils
Instructions
Preheat oven to 200 degrees. Mix the butter with orange juice and honey.
Coat the roast, place it on a baking tray and bake for 45 minutes during cooking, sprinkle with a little broth.
Cut the peel of the Orange sticks, put them in a pan with 2 tablespoons of water, sugar and cook until the liquid evaporates.
After 30 minutes of roasting, Peel sticks deployed on it and continue baking.
Rinse the lentils and place them in a saucepan with 3 cups water, the carrot, onion, bouquet garni, pancetta and garlic peeled.
Pepper, cover and simmer for 40 minutes on low heat, add salt halfway through the cooking.
Stir the mustard to butter, stirring well until mixture is smooth.
Check out the roast and cut it into slices, distribute them on warm dishes with lentils, nappate with the sauce and serve.

- 60 g butter
- the juice and zest of 1 orange untreated
- a spoonful of liquid honey
- a pig roast from 600 g
- a teaspoon of sugar
- 300 g green lentils
- a carrot slices
- an onion studded with cloves
- a bouquet garni:
- parsley, thyme and bay leaf tied with a cord
- 100 g of bacon in one piece
- 1 garlic clove
- 2 tablespoons mustard
- salt and pepper
