Baccala ' alla alcantara
Instructions
INGREDIENTS for 4 PEOPLE 1/2 kg.
Salt cod; 1/2 kg.
of potatoes; 1 package of frozen spinach; 100 g of olives; 1 clove of garlic; a bit of white wine; oil, salt.
Water cod, cut into pieces and FRY in a little oil; for dorarlo.
Boiled spinach, drain them well and let them jump in a little oil (where you have previously fried garlic, then removed).
Cut the potatoes into slices and doratele in oil.
Put them in a terracotta casserole and placed above the baccal pieces.
Cover with spinach and sprayed with white wine and a little water.
Add the olives and flavour with salt.
Simmer over low heat to reduce the liquid.
