Mussel salad with lemon

07956 MUSSELS with LEMON SALAD INGREDIENTS for 4 PEOPLE 1 kg of mussels, 2 medium-sized lemons, red onion, a lemon, 2 sprigs of lemon balm, 4 tablespoons of peanut oil d?, a spoonful of pink pepper berries, freshly ground black pepper, for garnish.
Wash the mussels and carrots, if necessary; pour into a casserole dish, add 2 tablespoons water, cover and let them open for 10 minutes at high heat, shaking the Pan gently.
Drain, remove the pulp and mix in a salad bowl.
Squeeze 2 lemons; peeled and sliced onion; wash the third lemon, dry it and cut it into thin slices.
Cut up the sprigs of lemon balm.
Mix the oil, lemon juice, red pepper berries and a generous pinch of black pepper, pour it over the mussels and stir.
Cover with plastic wrap and let marinate for 2 hours in refrigerator.
Very fresh mussels served with lightly toasted bread slices.
