Salmon skewers

2_07088 SALMON KEBABS INGREDIENTS for 4 PERSONS 900 g salmon fillets, 2 aubergines, courgette, red pepper, yellow pepper, spices & herbs of Provence, 4 tablespoons of olive oil, juice of 1/2 lemon, 2 tablespoons balsamic vinegar, a tbsp of soy sauce, a teaspoon of tabasco, salt and pepper.
Cut the salmon fillets and vegetables into pieces.
Put on wooden skewers a bit of Eggplant, Zucchini, red pepper and yellow, separating each ingredient from a piece of salmon, until you get three pieces of salmon for skewer.
Sprinkle the pretzels and pepateli.
Nappateli with olive oil and cook them in a pan.
Meanwhile, prepare the vinaigrette: mix the oil with the lemon juice, balsamic vinegar, soy sauce and tabasco.
The skewers are served on small plates and decorate with a little vinaigrette.
