Sole with tomato sauce

2_07200 SOLE with TOMATO SAUCE INGREDIENTS for 4 PERSONS 800 g small soles, 200 g of ripe tomatoes, 4 teaspoons of olive oil, onion, salt, pepper. Clean the sole, spellatele, svuotatele and wash them thoroughly, then dry them. Take a pan and off so that it can contain all sole arranged in one layer only; put the oil and fry the onion in thin slices. Add tomatoes washed, peeled, deprived of seeds and cut into pieces and let stand for about 10 minutes. Place the sole in order to form a single layer, Cook for a few minutes, then, using a spatula, gently turn it on the other side, add salt, let it dry a bit, then remove sauce from heat and serve.
