Salmon with grapefruit sauce

07278 GRAPEFRUIT SAUCE with SALMON INGREDIENTS 4 PEOPLE 4 slices of fresh salmon, 1 leek, 1 carrot, 1 stalk of celery, 1 glass of broth, 1 grapefruit, 1 sheet of gelatin, extra virgin olive oil, salt.
CASE clean the vegetables and cut them into pieces, rosolatele in a little oil, over low heat, until the vegetables are tender.
Add grapefruit juice and broth, simmer for 15 minutes.
After blend everything to obtain a homogeneous sauce.
Put back on the heat this sauce, add the gelatin sheet (put previously soaked in hot water) and cook for 5 minutes.
Season with salt and cook salmon grilled.
Serve the fish with the sauce and decorated with a slice of grapefruit.
