Instructions

with PRUNES INGREDIENTS 4 PEOPLE 1 young rabbit about 1, 300 kg, 1 onion, 1 glass of white wine, 150 g of pitted California prunes, some juniper berries, 2 Tablespoons extra virgin olive oil, salt and pepper.

Clean PROCESS the rabbit, split it into pieces, wash them and dry them.

Put them in a bowl, add sliced onion, juniper berries, wine and leave to marinate for 4-5 hours, turning the pieces of rabbit from time to time.

Drain well, Pat dry, season with salt and pepper, sauté them in a pan with hot oil, until it will be colorful from all over.

Pour over the marinade and prunes and cook over moderate heat for 50 minutes.

When cooked, drain the rabbit pieces and arrange on serving dish, reduce the broth, if necessary, pour over the rabbit or gravy boat, by passing it through a strainer and serve immediately.
