Bruschetta with ratatouille
Instructions
Peel and cut in cubes all vegetables.
Fry the onion in two tablespoons of olive oil and add the peppers, carrots and tomatoes, leave on the fire for 15 minutes basting with broth.
In a small frying pan you blast the Eggplant with a spoon of oil and add the other vegetables.
Toasted bread and garnish each slice with ratatouille of vegetables and a cocktail cherry.

- 4 slices of bread
- 4 cherries of mozzarella
- 1 small eggplant
- 1 carrot
- 1/2 red pepper
- 1/2 yellow pepper
- 1 small white onion, chopped
- 2 tablespoons of chopped tomato pulp
- 1/2 cup of vegetable broth
- 3 tablespoons of olive oil
