Duck carpaccio with fruit

09735 Duck CARPACCIO with FRUIT INGREDIENTS for 4 PEOPLE 2 duck breasts, a cluster of red currant, 250 g of type salad radicchio, 2 small white onions, granny smith apples, scallions for garnish. For the sauce: 2 tablespoons cider vinegar 2 tablespoons walnut oil, 5 tablespoons of sunflower oil, 2 tablespoons chopped shallots, salt, pepper. Place 4 plates, for 10 minutes, in the freezer. First prepared the sauce: in a bowl, mix the vinegar, olive oil, onions, salt and pepper. Pour half into a deep dish. Remove oily skin of duck, cut the meat into thin slices and let them soak for 5 minutes, in the middle of the sauce. Rinse and dry the currants and the salad. Peel and slice the onions. Cut the Apple without peeling, thinly and spread it on the plates with the lettuce and onions. Lay duck slices and sprayed with the rest of the sauce.
