Instructions

10399 RADICCHIO PIE INGREDIENTS for 4 PEOPLE 270 g wholewheat flour of type 1 or type 2, 25 g of fresh yeast, 800 g radicchio, 50 g onion, black olives, 10 100 g fontina cheese, olive oil, salt, red chili powder.

Place the flour on a pastry Board and pour the yeast, a pinch of salt, a pepper, a bit of oil and about a cup of Luke-warm water (if you prefer, you can dissolve the yeast in water beforehand).

Knead the dough with your hands for a few minutes, then let it rise in a warm, covered, for at least an hour.

In the meantime devote yourselves to prepare radicchio: wash it carefully, cut coarsely and let then cook at moderate heat, covered, in a saucepan with oil and onion thinly cut.

Add salt and season with a pinch of chili at the end of cooking.

When the dough is properly leavened, turn on the oven to 200° and divide the dough in half.

With a piece a cake tin lined round oiled and put over the fontina cheese cut into thin slices, then the radicchio and finally pitted olives.

Cover with remaining dough, well welded edges and leave in the oven for half an hour.
