Semifreddo with plum salsa
Instructions
17428 PLUM PARFAIT with CHOCOLATE SAUCE INGREDIENTS for 4 PEOPLE 400 g of prunes, 150 g whipped cream, 75 g sugar, 6 eggs, 2 tablespoons Kirsch.
For the sauce: 150 g dark chocolate, 25 g of butter.
PROCEDURE Put the sugar in a small pot over an open fire place with 100 ml of water and cook for a few minutes.
Add the plums, cut in half and pitted, Cook for a few minutes, remove from heat and pour the liquor, let cool and then remove the plums.
Knead the egg yolks and add them in syrup stirring.
Cook in a Bain-Marie, ramming forcefully enough to thicken and double cream volume (about 10 minutes).
Remove from heat and let cool.
Add the cream and plums and finally unite three egg whites.
Pour the mixture into a mold, slightly damp cloth and put it in the freezer for an hour.
Drafted and serve immediately with warm chocolate sauce.
Sauce: melt the chocolate in a Bain-Marie to pieces with butter and a little water.
