Caramelized apricots
Instructions
Cut the apricots in half, cherries and keep them aside. Mix the egg yolks with the sugar just enough to get a creamy consistency. Add the cream and Cook, in a double boiler, stirring constantly to thicken.
Pour the cream in a bowl, place over the firewall apricots with almonds and sprinkle with raw sugar; au gratin enough to caramelize.

- 12 apricots
- 4 egg yolks
- 2 packages of cream
- 100 g sugar
- 75 g brown sugar
- 50 g slivered almonds
