Grapefruit gratin with cream

20597 GRAPEFRUIT GRATIN with CREAM INGREDIENTS for 4 PEOPLE 5 pink Grapefruits, 4 egg yolks, 5 cl of cream, 50 g powdered sugar, 2 tablespoons powdered sugar, a glass of sweet wine Moscato type.
Preheat oven to 180° bleed 4 Peeled grapefruit, suddivideteli then in cloves and peel off their skin.
Squeeze the remaining grapefruit and pour the juice in a large bowl.
Stir the egg yolks, sugar and wine.
Place the bowl in a pan filled with water.
Place over heat and bring to a boil; stir continuously with a whisk by hand until mixture is clear and foamy.
Remove from heat.
In another bowl pour the cream and 2 tablespoons powdered sugar and whip vigorously with a whisk by hand.
Add the cream and stir gently again from bottom to top.
Arrange in a radial pattern grapefruit segments on individual plates and pour the cream.
Bake and Grill for a few minutes.
Served hot.
