Red Lentil soup
Instructions
Clean the lentils thoroughly, wash in plenty of water and drain.
Clean the carrots, potatoes and onions, wash them and cut them into cubes; clean the celery, deprive it of the filaments, wash and slice it.
In a saucepan, then heat the oil, add carrot, potato, celery and onion and let them wither without paint, stirring often.
Add to the pan the broth, lentils, coriander, curry powder and a pinch of salt.
Bring gently to the boil and continue cooking at moderate flame for 30-35 minutes, stirring occasionally.
When cooked, spread it on the plates, sprinkle with pepper and serve hot.

- 2 potatoes
- one teaspoon curry satin
- a pinch of ground coriander
- 1 l vegetable broth
- 2 Tablespoons extra virgin olive oil
