Instructions

05769 PANISSA with LEEKS INGREDIENTS for 4 PERSONS 250 g of flour sifted, 800 g water 300 g leeks already cleaned and cut, 2 cloves of garlic, 3 sprigs of mint, 30 g olive oil, 50 g of dry white wine, salt, pepper.

Bring to a boil the water and a pinch of salt; pour in the flour and cook for 10 minutes.

Reflect on a clean cutting board and let cool.

Clean the leeks and trim away the fibrous green part.

Cut them in half, then into strips lengthwise.

Peel the garlic cloves and soffriggeteli in oil with the bunch of mint, add the leeks and the wine, add salt and pepper and stufateli gently for 10-15 minutes until they will be soft.

Cut into 2 cm sticks about panissa, brush with a little oil, salt and pepper.

Run the oven under the grill for a few minutes and toss gently with leeks.
