Grilled fennel salad and tomatoes

08069 GRILLED FENNEL SALAD and tomatoes INGREDIENTS for 4 PEOPLE 5 tablespoons olive oil, 2 cloves garlic, crushed 3 tablespoons balsamic vinegar, 1 tablespoon chopped Basil 1 tablespoon chopped parsley, fennel, 2 2 tablespoons olive oil 250 g tomatoes, salt, pepper.
Preprate a vinaigrette by mixing the oil with the garlic; then, stirring constantly, add the vinegar, basil, parsley, salt and pepper.
Wash the fennel, cut off the base and remove the first leaf which is always a bit tougher.
Then cut them into thin slices about 2 mm thick, with the help of a sharp knife.
Wash, dry and cut the tomatoes in half and then into thin slices.
Heat a griddle for cooking on the grill and cook for a minute the slices of fennel.
Arrange the fennel with tomatoes in a bowl and nappate with the vinaigrette; stir well and garnish with basil leaves.
Served warm.
