Instructions

PRAWN SALAD CO 08575 pineapple INGREDIENTS for 4 People? fresh pineapple, 2 egg yolks, 2 tsp mustard, 20 cl of sunflower seed oil, 125 g of natural yoghurt, 8 hard-boiled eggs, 12 leaves of salad, a green pepper, a red pepper, 1 kg of cooked shrimp, salt and pepper.

Peel the pineapple; directly over a bowl to collect the juice, cut it into slices and then into cubes.

In a bowl, beat the egg yolks with mustard, then, without ceasing to stir, add, little by little, oil, pineapple juice, yogurt, salt and pepper.

Shelled hard-boiled eggs and cut them into small pieces.

Rinse and dry the salad leaves, then cut into strips.

Peel the peppers, divide them in half, remove seeds and pith, and cut the flesh into small pieces.

Clean the prawns but keep aside 8 with their tail.

In a bowl, mix all the ingredients and decorate with sauce.

Served by decorating the plate with scampi kept aside.
