Salad of fava beans and clams

08643 BEAN and clam SALAD INGREDIENTS for 4 PEOPLE 1, 5 kg of frozen beans, 200 g of clams already cleaned without shell, a kg of mussels, a bouquet garni, 6 tablespoons of olive oil, untreated lemon, 1/2 teaspoon cumin powder, 1/2 teaspoon paprika 4 cloves garlic, 2 tablespoons chopped parsley, saltand pepper.
Cook the beans in boiling salted water for about 5 muinuti.
Drain and remove their outer skins.
Drain the clams from their sauce.
Using a brush, clean the shells of mussels and rinse thoroughly; then place them in a saucepan with 2 tablespoons thick Fund of oil, the bouquet garni, 10 cl of water, salt and pepper.
Cover and bring to a boil and continue cooking over high heat for about 6 minutes: all mussels will open.
When cooked, let cool and then remove mussels from shells.
Strain the mussel cooking sauce through a mesh strainer.
Finely grate lemon rind.
In a saucepan on high edges, you blast the beans with cumin, paprika, grated lemon rind, 10 cl of water, the cloves of crushed garlic, salt and pepper; then add the mussels cooking juice, the remaining oil and cook for 10 minutes at moderate fire: the beans should be very tender.
A few minutes before end of cooking, add the parsley, the clams and mussels.
Mix well and serve warm.
