Seafood salad with lemon grass

08657 SEAFOOD SALAD with LEMONGRASS INGREDIENTS for 4 PEOPLE 2 bulbs of Lemongrass, dried chillies, 2 600 g of seafood already cleaned and pre-cooked (can be frozen), 200 g shrimp tails already cleaned.
For the sauce: 2 cm of fresh ginger, lime, chopped 2 shallots, 2 tablespoons nam pla (fish sauce), a clove of garlic, a tablespoon of chopped Mint, 1 tablespoon chopped cilantro, salt and pepper.
Peel and finely chop the Lemongrass.
Put it in a tall saucepan with 50 cl water and chilies.
Bring to a boil, cover and simmer 5 minutes on a moderate flame.
Then add the seafood and continue cooking until it is well cooked.
Drain with a strainer, close-mesh net, remove the peppers and let cool.
Peel the ginger.
In a bowl, grate the lemon zest and ginger.
Squeeze the lemon and pour the juice in the bowl.
Add chopped shallots, fish sauce and garlic.
Pour the seafood and the shrimp, add salt and pepper and mix thoroughly.
Let it then marinade in the refrigerator for about an hour.
Before serving, remove the Bowl from the refrigerator and leave it at room temperature, Sprinkle chopped coriander and Mint.
When serving, split the salad in individual bowls.
