Instructions

2_04292 FAVE GAZPACHO INGREDIENTS for 10 PERSONS 450 g broad beans (fresh or frozen), a nut, 4 cloves of garlic, 2 tablespoons walnut oil, 4 tablespoons of olive oil, 20 cl of whole milk, salt, pepper.

If the beans are cool, make them Blanch 2 minutes in boiling salted water, drain and raffreddatele immediately under cold running water and remove the skin.

If the beans are frozen, let them Blanch 4 minutes in boiling water to which you've added the nut, then raffreddatele under cold running water and remove the skin.

Pour the beans in the Blender jar, add the peeled garlic cloves, milk, oil, salt, pepper and blend until obtaining a smooth and homogeneous cream.

Keep cool until ready to use, then pour into small glasses and serve.

If you want you can prepare this recipe with tomatoes or peppers.

Cook with a clove of garlic or onion and spiced with some spice or Tabasco.
