Potato and ham sandwich

00937 POTATO and ham SANDWICH INGREDIENTS for 4 PEOPLE 1 kg of potatoes, 4 slices of cooked ham each thickness of 5 mm, 100 g of Parmigiano Reggiano, 15 cl of milk, 2 eggs, flour, breadcrumbs, salt, pepper, a pinch of nutmeg, oil for frying.
Cook the potatoes in boiling salted water.
Pour the milk in a saucepan, add a nice ground pepper and a sprinkling of nutmeg and cook.
Drain the potatoes and peel them.
Pass through a ricer, and transfer the puree in a bowl.
Add the warm milk and stir.
Stir 100 g of Parmesan cheese and stir again.
Let cool.
Spread the mashed potatoes on a baking plate in the thickness of a cm.
With a round pasta cutter 5 cm diameter, produced 16 circles of mashed potatoes.
With the same pasta cutter, cut circles from 8 slices of ham.
Prepared sandwiches: on a bed of mashed place a circle of ham and over again a circle of mashed.
In a bowl beat the eggs with a pinch of salt and pepper.
Take the sandwich and then toss them gently before in beaten egg and then in bread crumbs.
In a tall pan, heat oil for frying and then bake the potatoes and ham sandwich 3 minutes per side.
Serve.
