Scampi with tomato cream

07583 SCAMPI with TOMATO CREAM 4 PERSONS INGREDIENTS 20 shrimp, white wine, chopped 4 ripe tomatoes, carrot, celery, chopped onion, basil, extra virgin olive oil, sugar, butter, seasonal vegetables cut into small pieces, blanched, salt and pepper.
In a pot put all cold, tomatoes and vegetables with a little oil and cook for 10-15 minutes.
Pass the tomatoes in a blender and place back on the stove, add the salt, pepper, butter, a little sugar and simmer for three minutes.
Boil in salted water and white wine scampi.
When they are cooked, place in a Holster where you put the hot tomato cream.
Garnish with blanching vegetables and seasoned with raw oil.
