Calamari alla romana
Instructions
Clean the squid well, then wash them, dry them and cut them into strips.
Clean the artichokes: discard the stalks, outer leaves and the filaments in the Center; then cut them into wedges.
In a pan take some spoonful of spice with Chili oil and crushed garlic clove; Remove garlic and arrange the squid.
After having made dry, moisten with the wine and add the anchovies, wash that will dissolve in the cooking.
When the wine has evaporated add a ladle of hot water and artichokes; Add salt, lower the heat and continue cooking, possibly using some other ladleful of water.
Before serving, season with salt and sprinkle with chopped parsley.

- 800 g of squid
- 2 anchovies de-boned
- 3 artichokes
- 1 clove of garlic
- Chopped parsley
- 1 glass dry white wine
- Olive oil extra virgin
- Salt
- Hot pepper
