Take a pan, grease with a little olive oil and sprinkle with finely grated pecorino.
Put on the fire until the cheese doesn't melt evenly, keeping unchanged its color.
Remove from the heat and form with a tablespoon of melted cheese strips that will be rolled up with the sweet and fresh caciotta forming small cannoli.
Serve hot accompanied by champagne or sparkling wine as aperitif.
